Karl Artur Gnauck (1870-1934) had tried to become an independent baker in his home town of Dresden had his chance with the now available bakery. Along with his wife, Elisabeth Frieda (Flechs), a son and two grown daughters, he moved to Ottendorf and registered his business on April 10th 1919. His business opened on Saturday, November 1st 1919. It was not an easy start. During the first few months is was commonplace for Frieda Gnauck to take a train ride to Dresden to barter his bread to neighbors, friends and relatives. She did this way up into her old age. Children, grand kids, neighbors and customers lovingly called her "kleine Oma", little gramma. From 1925 on, Karl Artur Gnauck, carefully invested in the business, growing and stabilizing it. Later generations grew the business in the same fashion, carefully expanding it.
